Lately, it seems there’s been a lot more news than usual about the science of sleep and how a chronic lack of sleep can damage your health, raise your risk of heart attack and stroke, impair your decision-making ability and contribute to obesity and Alzheimer’s.
But what you may not know is that chronic sleep deprivation can also raise your risk of gum disease or make existing periodontal problems worse.
In fact, research suggests that it’s more damaging than either chronic stress or daily alcohol use. Only smoking – the number one risk factor for gum disease – has a bigger impact.
In general, the risk goes up for those who sleep 6 hours a night or less – a figure in line with the latest guidelines released by the American Academy of Sleep Medicine. They recommend 7 to 8 hours minimum for healthy
adults to minimise their risk of any health problems associated with chronic sleep debt – and give no upper limit for sleep.

Strawberry Chocolate Tart
250g packet Arnott’s choc ripple biscuits 250g dark chocolate, chopped 125g butter (extra), chopped 3 egg yolks 2 tablespoons strawberry jam 125g butter, melted 1/3 cup thickened cream 2 eggs 1/3 cup caster sugar 250g strawberries, thinly sliced
Preheat oven to 180C or 160C fan forced. Grease a 24cm (base measurement) loose-based fluted tart tin. Place on a baking tray.
Process biscuits in a food processor until finely crushed. Add melted butter and process to combine. Transfer to prepared tin and use a spatula to spread and press over the base and side. Chill for 30 mins.
Stir chocolate, cream and extra butter in a medium saucepan over
low heat for 2 mins or until chocolate melts. Cool for 5 mins.
Meanwhile, use an electric mixer to beat eggs, egg yolks and sugar in a small bowl for 3 mins or until thick and creamy.
Gradually beat the chocolate mixture into the egg mixture. Pour into the biscuit base. Bake for 15 mins or until filling is just set. Cool for 15 mins. Chill for 2 hrs or until firm.
Place jam in a small heatproof jug with 2 teaspoons water. Microwave on high for 20 secs or until jam melts.
